Casey's Jujube Bumper Crop

These are Jujubes.  What is a Jujube?

Casey loves Jujubes, these are sweet and crunchy when fresh.

This is one of Casey's Jujube trees, you can see the tree is full of fruits.

With the bump crop, it's impossible to consume all within a short time.   Casey put the Jujube in trays to dry them by air.

The top two are the fresh Jujubes and the bottom two are the dried ones. The dried ones are chewy and sweet, they can store for a long time.

Jujube is a common dried fruit in Asia, the alternative name is Chinese Date or just Red Date.  If you are not lucky enough to get some of Casey's, you can find these in an Asian market or even on line.   These dried fruits are either consumed as a snack or put into Asian style desserts that are usually steamed.  After steaming, the fruits become soft and a bit mushy but very tasty.  If it's peeled and pitted, the sweet mushy paste is also used as fillings in the buns or cakes. The Jujube paste is very similar to the red bean paste that is commonly used as fillings in Asian pastries.
